Manchego and Fig Scones


300g Self-Raising Flour
1/4 teaspoon of fine sea salt
1 tsp Smoked Paprika
75g Cold Unsalted Butter
150g Manchego Cheese grated (save 25g for the tops before baking)
100g Finely Chopped Dried Figs
140g whole milk for mixing.
Step 1. Preheat oven to 200C / 180C Fan and pre heat the baking tray.
Step 2. Place the flour salt and paprika into a bowl with the cubed cold butter.
Step 3. Rub with finger tips to bread crumb consistency.
Step 4. Add the grated Manchego cheese with the chopped figs and mix through.
Step 5. Pour the milk in little by little until a soft dough forms.
Step 6. Roll out the dough n a lightly floured work surface to about 2cm thick
Step 7.Cut out with a 6cm Pastry cutter (a small glass will do he job just as well)
Step 8. Remove the tray from the oven line with baking parchment.
Step 9. Transfer the scones to the baking tray and brush with a little milk on the tops only and sprinkle remaining grated cheese on top.
Step 10. Bake for12 to 15 minutes until risen and golden.
